Artichoke Zucchini  Mushroom Mac & Cheese

1 medium sized onion diced cone #3
1 large zucchini cone #3
11/2 cup mushrooms cone #4
1 jar of marinated artichoke hearts  6-10
1 package miyoko’s cheese mozzarella ball
2 veggie bouillon cubes
3 cups water,  1 package gluten free pasta 14 oz
Fresh herbs for serving
Layer in the electric skillet or 11inch skillet
Onions, mushrooms, pasta, water, bouillon cubes, artichokes, zucchini & cheese. Start at medium heat 300 degrees- medium click low. cooks total of 30 mins
Stir well and top with fresh herbs. 
For a cheesier version add a tub of cashew cheese. 
Or make your own:

1 cup cashews, 11/2 cup water, 4 T nutritional yeast, Salt, lemon juice from 1 lemon, 1 tsp onion powder. Blend well until creamy in a high speed blender.
