1/2 c. BBQ sauce I like Annies Organics or make your own
1/2 c. black beans + 1/2 pinto
1 avocado, sliced
1 cup corn, cooked and sliced or thawed drained sweet frozen corn
1/4 of a red onion, cone #2
2-3 shredded carrots cone #2
3 c. shredded green cabbage cone #4
Dressing Recipe below:
Preheat EOS to 400 degrees.
brush a little oil in skillet and Place cauliflower florets in skillet and bake -7 -10 minutes.
Brush the BBQ sauce onto the cauliflower. Bake another 2-3 minutes.
Assemble all of the ingredients together for the salad.
Non-Dairy Ranch Dressing Recipe
1/2 c cashews, soak for 2-3 hours and drain
1 c. water
1-2 garlic cloves
1 Tb fresh parsley
1 tsp celery seed
1 Tb f chives
1 tsp dried dill
juice of 1/2 lemon
1/2 tsp raw apple cider vinegar
1/2 tsp salt
fresh ground pepper
In a high-speed blender, all everything together except for the parsely, chives and dill until completely smooth. If you like a thinner dressing, add a little water at a time until desired consistency is reached.
Add herbs and pulse.
Season with salt and pepper. Adjust according to taste.
