Detox Salad & Dressing

Detox Salad
3 large red beets, shredded  cone #2 & #1{makes 2-3 cups}
½ head green cabbage, finely chopped cone #2 {makes about 2 cups}
1 bunch dinosaur kale, shredded {makes about 2 cups}
1/2 cup fresh cilantro, finely chopped
zest of 1 lemon {~1 Tbl}
¼ cup sunflower seeds for sprinkle
Detox Salad Dressing
{double recipe for heavier dressing}
2 lemons, juiced {~4 Tbl}
1/2 cup raw sunflower seeds – 1 ½ cups water
1 Tbl fresh ginger, grated
2 cloves garlic
4 Tbl apple cider vinegar
1 tablespoon curry powder
2 1/2 teaspoons pure maple syrup
Salt & pepper
Directions: Detox Salad
Combine all the ingredients in a large mixing bowl.
Detox Salad Dressing
Combine all ingredients in a food processor or blender and blend for 1-2 minutes, or until smooth and creamy.
Toss the salad ingredients with the dressing. Plate and top off with a generous sprinkling of the fresh lemon zest and sunflower seeds.
Sulforaphane, in Cruciferous veggies is already known to trigger the liver to produce enzymes that detoxify cancer-causing chemicals. They also contain compounds that help protect our stomach lining against mischievous bacteria
Beets are awesome. They are full of nutrients and are a great source of vitamins B3, B6 and C, plus beta-carotene, magnesium, calcium, zinc, and iron. They assist our liver and gall bladder in breaking down toxins, and their fiber is great for digestion and elimination. Shredded raw beets are the best (eat some on top of a big pile of greens with a sprinkle of lemon juice — those toxins won’t even see it coming!).
Lemons jump-start digestion by stimulating the release of enzymes and Vitamin C helps convert toxins into a water-soluble form that can be easily eliminated from the body. Lemons also help stimulate the liver and purify our blood!

 Cilantro is aces for ridding the body of heavy metals which can lead to depression, cancer, hormone and thyroid problems, and lots more. The chemical compounds in cilantro actually bind to these toxins, loosening them from the blood, tissues, and organs and assisting with their elimination from the body.
