MOROCCAN TOFU & POTATOES W/ ZUCCHINI & SUN DRIED TOMATOES

 

Ingredients
2 cups mushrooms cone #4
1.5 cups broth
2 tsp smoked paprika
salt and black pepper
1/2 tsp of chili flakes
5 medium Yukon gold potatoes
1 package Moroccan tofu
2 medium zucchini cone #4
1/4 cup sun dried tomatoes sliced
chopped herbs to serve
1 package miyoko’s smoked mozzarella cheese


Directions
Layer in Electric oil core skillet, mushrooms, potatoes, spices, broth, salt and pepper, moroccan tofu cubes, zucchini, cheese sun dried tomatoes. start at 350 degrees, click down to 200 degrees cook for 30 mins. serve with fresh herbs
