Purple Soup

1 Medium Red Onion, Diced cone #3
4 Cloves Garlic, Minced cone #1
4 Cups Shredded Red Cabbage cone #4
1/3 Cup Black Quinoa
2 Medium Purple Potatoes, cone #3 (About 1 Pound)
1 Bay Leaf
4 Cups water  +  4 Vegetable bouillon cubes
2 Tablespoons Miso Paste

1/2 Teaspoon Ground Black Pepper
1 Tablespoon Vinegar
1/2 Cup Frozen Green Peas 

Place all ingredients except peas and miso, in a stock pot or Mp5 crockpot  cook at 400 degrees- click down to low. Season with black pepper & salt, adjusting to taste if needed.Toss in the frozen peas and miso paste and simmer just until thawed and hot all the way through. Makes 4 – 6 Servings
