Quinoa Tabbouleh

Quinoa Tabbouleh

 3 cups cooked quinoa
 2 cups cucumber, diced small cone # 3
1 cup tomatoes, diced small
 1/4 cup coarsely chopped mint leaves
 1/4 cup coarsely chopped parsley leaves
 2 scallions, sliced thin 

1/3 cup fresh lime or lemon juice
 1/2 teaspoon ground cumin
 1 garlic clove, minced
 1/2 cup good quality olive oil or
 Salt and fresh ground pepper to taste

Toss all ingredients in a big bowl until combined. Recipe by Kai
