Summer Salad

Summer Salad
1-2  fresh tomatoes chopped
2 cups arugula or romaine lettuce
1 Persian cucumber chopped cone #3
 1/2 small mini watermelon cone #3
1 cup packed fresh basil and mint chopped
¼ cup capers
¼ cup green onions chopped
lemon zest
salt and pepper

Mix all ingredients and serve with dressing

Vegan Caesar Salad Dressing
1 cup raw cashews, soaked in water 4-8 hours and drained
3 garlic cloves, or even more if you like
2 tbsp. white miso paste
2 tbsp. lemon juice
1 tbsp. vegan Worcestershire sauce
1 tsp. Dijon mustard
3/4 to 1 cup water
salt to taste
blend all in  a vitamix until smooth
